For the Dough:

  • 30 g hot chili sauce
  • 1 medium egg
  • 475 g all-purpose flour

  • 40 g finely ground nacho chips
  • 30 g unsalted butter

For the Chicken Mixture:

  • 400 g chicken thighs
  • 3 g salt (1 ½ teaspoons)
  • 3 g cayenne pepper (1 teaspoon)
  • 4 g onion powder (1 ½ teaspoons)
  • 2 g black pepper (½ teaspoon)
  • 25 g hot chili sauce

For the Flour Mix:

  • 75 g all-purpose flour
  • 1 g salt (¼ teaspoon)
  • 2 g black pepper (½ teaspoon)
  • 3 g onion powder (1 teaspoon)

For the Coating:

  • 2 medium eggs
  • 160 g nacho chips

Extra:

  • 1 medium egg for brushing


πŸ‘¨‍🍳 How to Make Hot Chili Chicken Burgers – Step-by-Step


1. Grind the Nacho Chips

Grind 200g of nacho chips finely using a food processor. Set aside 40g for the dough.


2. Prepare the Dough

Mix lukewarm milk, yeast, and chili sauce. Let it rest for 5 minutes.
Add a beaten egg, then flour, salt, ground nacho chips, and butter.
Knead for 10–12 mins. Cover and let rise 1 hour.



3. Marinate the Chicken

In a bowl, combine chicken with salt, cayenne pepper, onion powder, black pepper, and chili sauce. Let it sit.



4. Make the Flour Mix

In another bowl, mix flour, salt, black pepper, and onion powder.



5. Coat the Chicken

Dip marinated chicken in the flour mix, then beaten eggs, then ground nachos.
Place on a parchment-lined tray.




6. Shape the Buns

Deflate dough, divide into 12 pieces, roll into balls, flatten to 13cm.
Fold in half, brush with egg, dip in ground nachos.



  



7. Fry the Buns

Let rise 30 mins. Fry both sides in 175°C oil (2cm deep) till golden. Drain on paper towels.




8. Bake the Chicken

Bake at 175°C for 25–30 mins until golden.


9. Assemble the Burger

Slice buns open, add sauce, lettuce, and the chicken. Serve warm!
